Definitely start with the Willmaker programs like from Quicken. They allow you to take time and think about what you want to do, and give helpful advice along the way. After that, you can still go to a lawyer if you want, but won’t have to spend as much time (read $$$) getting the final product – you will have done a lot of legwork beforehand, and will be able to ask more intelligent questions.

Depends on how much you have to give and if there will be people fighting for it. If not, Quicken will be fine.
I would see a lawyer. If you have sufficient assets, setting up a trust is a good idea. It can be costly depending on what you want. I am by no means wealthy, but with the trust, you can be comfortable in knowing that your specific instructions will be followed.
